Why your knock drawer matters more than you think

There's a predictable order to how most home baristas build their setup. The espresso machine comes first, this is usually weeks of research, comparison videos, forum threads and endless reviews. Then the grinder, chosen just as carefully, because it's important, right? after that is the tamper, scales, distributor. Everything deliberate.

And then, almost as an afterthought, a knock drawer. Every time you pull a shot you create a puck, that puck has to go somewhere and yet the knock drawer is usually forgotten about, some alternative is bought, maybe it's plastic, maybe cheap stainless steel and is pretty much ignored until it starts rattling, something breaks or the grinder wobbles every time it's used.

A knock drawer is used every single shot. It takes the impact of a full portafilter, supports the weight of a grinder, and sits in the most visible spot on the counter. A flimsy one doesn't just look out of place, it changes how the whole station feels to work at and visa versa.

Every drawer we make is fabricated from stainless steel. heavy, food grade stainless steel. The tolerances are high. The joints are folded and riveted, not welded, meaning no breakages. We could have built them lighter or cheaper. We chose not to, because the best equipment is the kind you never need to replace.
